In Season Now: July in the North East

This month is when all the goodies really start to come in here in the North East.

Peaches are coming in locally now and I'm all about it.

Here is a recipe for quick picked peaches. Use them with Pork, Beef or Chicken that has been seasoned and grilled.

Quick Pickled Peaches

  • 2 cups White Wine Vinegar

  • 1 1/2 cups water

  • 1/4 cup sugar

  • 2 Tbls Yellow Mustard Seeds

  • 1 Bay Leaf

  • 1 Tbls Black Peppercorns

  • 2 Tbls of Salt

  • 4 large Peaches, pitted and cut into 1/2 inch dice

  1. In a large sauce pan combine everything except the peaches. Bring to a boil and ensure the sugar has dissolved.

  2. In a heatproof bowl place the diced peaches.

  3. Pour the hot brine over the peaches.

  4. Allow the peaches to enjoy the brine for about 1 hour on the counter.

  5. After the hour is up place peaches in the refrigerator for at least 30 minutes before serving.
