This month is when all the goodies really start to come in here in the North East.
Peaches are coming in locally now and I'm all about it.
Here is a recipe for quick picked peaches. Use them with Pork, Beef or Chicken that has been seasoned and grilled.
Quick Pickled Peaches
2 cups White Wine Vinegar
1 1/2 cups water
1/4 cup sugar
2 Tbls Yellow Mustard Seeds
1 Bay Leaf
1 Tbls Black Peppercorns
2 Tbls of Salt
4 large Peaches, pitted and cut into 1/2 inch dice
In a large sauce pan combine everything except the peaches. Bring to a boil and ensure the sugar has dissolved.
In a heatproof bowl place the diced peaches.
Pour the hot brine over the peaches.
Allow the peaches to enjoy the brine for about 1 hour on the counter.
After the hour is up place peaches in the refrigerator for at least 30 minutes before serving.
