The first Misfit Market box arrived and it includes fruits and vegetables that I normally would not pick up on my trip to the grocery store. Here is how I prepared each one.
This post is all about the Tomato, Celery & Red Onion.
Chicken Salad with Vegetables
For the Chicken Salad:
2 cups cooked chicken, chopped into bite-size pieces
½ cup mayonnaise
2 stalks celery, diced
1 large carrot, diced
1 small red onion, diced
2 teaspoons dijon mustard, optional
salt and pepper to taste
Combine all in a large bowl.
Bibb Lettuce
Radish
Cucumber
Sweet Pepper
Sweet Tomatoes, cut in half
Lay out whole bib lettuce leaves on a plate.
Add chicken salad.
Using a sharp mandolin shave the vegetables on to your plated salad.
Add some tomatoes and top with a balsamic reduction of your choice.
Chicken salad can take on a lot of add-ins. When grapes are in season for example I add grapes and leave out the peppers. I've also been known to toss some bacon crumbles in there. The point being use what you have and flavor combinations that you enjoy.
Did the Celery and Red Onion pass the challenge? YES! ...they did it again!
